Ingredients

2 tbsp ground blanched almonds
**1 tsp pomegranate syrup blended with 4 tbsp warm water
½ tsp sugar
½ tsp cinnamon
½ tsp ginger

Preparation

“Pound all ingredients together using a mortar and pestle (for small amounts, it is simpler than using a food processor). Taste and adjust seasonings if and as desired; add a squeeze of lemon juice if the flavour is to be sharpened.***

“Lemon juice could substitute for pomegranate juice in this recipe, as it does in others. . . .”

*Lord-Williams' version is in azúcar en polvo published on 20 January 2012.
**In the preparation, Nola calls for “juice of sour pomegranates.”
***Use seeds as garnish!
