ALMENDRADA, HORCHATA DE ALMENDRAS, ALMOND DRINK RECIPE

FOR THE CHICKEN BREASTS
2 chicken breasts
4 c  water
1 large onion, halved and peeled
1 carrot cut into chunks - peeled
1 stalks celery, cut into chunks
1 tbsp whole peppercorns

FOR ALMENDARADA
1c almonds
boiling water
4 tbsp dried melon seeds
2 tbsp rosewater
3 c chicken broth from boiling the chicken breasts
6 tbsp sugar


Preparation

Put the breasts in a pan of water with onion, carrot, celery and peppercorns and bring to a boil. Reduce heat and simmer about 20 minutes they shred easily.

Blanch almonds in boiling water and remove skins. Grind them in a blender with the chicken breasts, sugar and melon seeds. Add a little rosewater when stopping the blender to push the mixture around. 

When well ground add chicken broth. Strain it through a cheesecloth into a saucepan and bring to a boil. Add sugar and serve in soup bowls or chill and serve in a glass.

  1. ¡Qué extraño el uso de las semillas de melón! ¿tienen que ser frescas o secas? a lo mejor cumplían la misma función que después del descubrimiento de América las pipas de calabaza... Podría intentarse como sopa fría para el verano, en alternativa al gazpacho y el ajoblanco.

  2. Sorry, will correct. Good point - seeds are dried. They add flavor and crunch to the recipe. Pumpkin seeds don't count for being New World. The recipe calls for melon seeds! Sure try them with a cold gazpacho or garlic soup. They are a refreshing variation.
