ALMENDRADA – 15th C ALMOND MILK SHAKE FOR THE SICK WITH HIGH FEVERS AND HEARTBURN ADAPTED FROM NOLA/`PÉREZ,  pp 120

For 4 drinks depending on the size of the gourd


Ingredients

1 lbs or 1 ¼ c shelled almonds
2 ½ c broth
1 tsp salt
1 grourd
2 1/3 tbsp sugar
¼ c rosewater

Preparation

Heat water in a saucepan. Do not let it boil. Blanch almonds by leaving them in the water a few minutes. (Interestingly, Nola explains that boiling water takes away the almond’s “virtue” and flavor.). Peel them. Grind them into flour. Place this in a saucepan. Heat adding broth a little at a time. When mixed, add 1 tsp salt..  If cooking over an open fire keep the pan away from the smoke. 

Boil gourd in 1 tsp salt and water. When done take two cutting boards or two silver plates and put the gourd between them. Press out the water in which they were boiled. Throw out the water in the saucepan and add the gourd. Add almond milk little by little, stirring continuously until thick and the gourd is thoroughly mixed with the almond milk. Add sugar and rosewater. This drink comforts the heart of the sick.
