Ingredients

2 eggplants
1 lb stewing meat
3 tbsp vinegar
1 tbsp murri
2 tbsp virgin olive oil
1 tsp freshly ground pepper
1 tsp cumin
½ tsp coriander seed
2 tbsp and 1 tsp cilantro
2 tbsp and 1 tsp rue
2 tbsp and 1 tsp peeled almonds
3 eggs
1 pk yeast
1 tbsp white flour

Cilantro leaves

Preparation

Wash eggplants. Cut off stems. Slice in half and rub with salt. Place face down on paper towels for 10 minutes at least.

Cut meat into bite sized pieces. Put them in a pot with vinegar, murri,* olive oil, pepper, cumin, coriander seed, cilantro, rue and almonds. Cover with enough water so that it is 1” above the solids.  Bring to a boil and lower heat, boiling gently until done, 5-10 minutes.

While the meat is cooking and after the eggplants have been in the salt for at least 10 minutes, boil water in another pot. Add the eggplants and boil until the flesh is soft, about 10 minutes. Remove the eggplants, squeeze out water and chop them.

Beat the eggs. Dissolve the yeast in them, Add the flour and beat. Add this mixture into the contents of the pot with the meat. Add the eggplant, stir all together and serve.
