TIPS FOR CHRISTMAS MENU ORGANIZATION

Special menus require overtime in the kitchen. There is nothing worse than the cook falling asleep over Hors Oeuvres on the day of the grand feast. To prevent this the following preparations are suggested:

in the autumn:
       marinate Olives, see aceituna posted October 10, 2010
        brew after dinner liquors

weeks before buy ingredients for and prepare (but do not fry if applicable) and freeze:
