CRIADILLAS WITH THE MEDIEVAL SPANISH CHEF'S RECIPE FOR BREADED TESTICLES

Est turmas, Eng testicles. 1. These are obtained by castrating the pig or other animal, which takes place before the slaughter in many Spanish hamlets, as testicles are tastier if removed while the animal is alive. Still this is considered an exquisite dish.

Ibn Zuhr explains they are hot and humid, if compared with the animal from which they come. They are very nutritive, present no difficulty in digestion, have a marked aphrodisiac nature and generate healthy nutrition.

Children are given testicles like vaccinations today to create immunity from illnesses. They are also to children who do not eat well to improve their appetite.

It is said that roasted testicles constitute a very nutritive food that can be given to tired people and convalescents. Their chyme also is of superior quality, as per Ibn Zuhr. They can be prepared like kidneys.

In Vera, Extremadura, testicles are seasoned with garlic and parsley and left to sit at least a half hour. Then they are breaded with flour or breadcrumbs and egg and fried or roasted.

FRIED TESTICLES FROM THE MEDIEVAL SPANISH COOK’S ARCHIVES

Ingredients

1 pig testicle
1/2 c breadcrumbs 
1 garlic clove mashed
1 tbsp chopped parsley
1 egg, lightly beaten
1 tsp ground mustard seed
1/8 tsp pepper
1 c oil, for frying

Garnish
A few sprigs of parsley

Preparation

Cut the testicle into 1/3” slices, removing the membrane from each slice after it's cut. Set aside.

Mix the breadcrumbs with fresh garlic and parsley. Put this in a bowl and set aside. Beat the egg and add the mustard seed and pepper. Put this in a small bowl.


HEAT OIL IN A DEEP FRYING PAN.

Dip each slice of the testicle in the egg mixture and then roll it in the breadcrumbs. Fry until golden brown, turning as necessary.
Test for doneness by inserting a knife into the middle of each slice from time to time. When done, remove from the frying pan and place on paper towels to remove excess oil. Serve immediately, garnished with parsley.
