CRIBO WITH MAZAWARA (A LENTIL DISH) A VEGETARIAN MUST!

The Gourd Adds Color to the Dish

Ingredients

1 c lentils
1 onion[2]
¼ c virgin olive oil
1 c gourd, ribs of  Swiss chard, lettuce or cucumber or melon[3]
1 tbsp vinegar
1 tsp ground coriander  
½ tsp ground cumin
salt to taste

Preparation

Wash lentils and soak overnight.

Skin and chop the onion. Put olive oil in a pressure cooker. When hot add the onion and fry until translucent.

Wash the lentils in hot water several times. Strain them using a strainer with holes smaller than the lentils. Put them in a pot and add 1 cup water, which should not cover them.  Add the gourd or other ingredient but  not add the melon. Cover and bring to a boil. Cook no more than 10 minutes if using a pressure cooker.

Remove from heat and let cool. When cool enough to open, add vinegar, coriander, cumin and salt. Mix well add the melon if desired.

Let sit until cook enough to eat and serve.
