DINERO WITH BIZA SAUCE WHICH IS GARLIC AND ALMOND MILK SOPPES

Ar dinar, Eng dinar, a gold coin. It was used in Arab dominated countries. In the 12th C, in Cordova, one dinar was worth 4.2 grs of gold. In the 14 C, it was a copper and silver coin or a unit of weight in Iberia. It weighed 30 wheat grains or 1,198 milligrams in Nola’s time. He states, in the Catalan text that two dinars equaled one dram (1/16 of an ounce) while the Castellan translation maintains that three dinars equaled one dram. BIZA SAUCE FOR TEN DISHES ADAPTED FROM NOLA'S xxxvii-1 SALSA BIZA PARA DIEZ ESCUDILLAS


Ingredients[1]

Breaking and Weighing Cinnamon

2 chicken or duck livers
1 head of garlic
2 tbsp olive oil
1 lb peeled almonds
5 c chicken broth
1 dinero or 1/32 oz ginger
1 dinero or 1/32 oz ground cinnamon
1 dinero or 1/32 oz pepper
4 egg yolks or 1 per dish
3 oz sugar or 3/4 oz per dish

Wrap livers in wax paper. Cut off the top of a garlic head and put it in a dish. Pour oil over it and put 2 tbsp water in the bottom of the dish. Put microwave on medium power and cook both for 6 minutes.  When done peel the garlic and separate the cloves.

Grind almonds in a food processer. Add broth, livers and garlic cloves and grind again. Refrigerate overnight. Grind the mixture one more time the next day and pour it through a strainer into a pot. Add spices, beaten egg yolks and sugar. Heat, but do not let it boil, and serve.




[1] The Medieval Spanish Chef has reduced the recipe to one third of the original except for the spices which the same amounts as Nola prescribed. It is enough for 4 servings.
