EINA (Leon) WITH A SWIFTLY MADE ROCKET RECIPE FROM THE 15TH CENTURY

ANOTHER GOOD ROCKET TO BE MADE SWIFTLY ADAPTED FROM PERÉZ’ TRANSLATION OF NOLA’S RECIPE  #152 OTRA ORUGA BUENA PARA DE PRESTO

Ingredients

400 gr rocket

1 tsp cinnamon
1 slice of bread without the crust
¼ c vinegar
½ c honey
1/8 c red or white wine

Garnish:
1 tsp cinnamon
1 tsp ginger scrapings

Preparation

Wash rocket and put it in boiling water for 2 or 3 minutes. Remove it from the water and squeeze out the water. Put the rocket in a food processor with the bread soaked in vinegar and the other ingredients. When chopped, put the mixture in a pot and bring it to a boil for the rocket to incorporate the honey.

Put it in a serving dish and garnish with cinnamon and ginger.
