FIGS IN THE FRENCH MANNER ADAPTED FROM NOLA’S xxxvi-2 COMER HIGOS A LA FRANCESA 
2 c sweet white wine
1 c sugar
11-12 whole fresh figs
1 tbsp “fine sauce”
Make a syrup by heating wine, sugar and spices in a pan. Cook over medium heat for about 10 minutes.
Add the figs to the syrup and cook 1½ hour, turning the figs from time to time as they change color.
Serve warm in the syrup.
