FRESA WITH MEDIEVAL ENGLISH RECIPE FOR STRAWBERRY POTTAGE

Cat madoxa, de maduixa, madoixa, mordaux, L. Fragaria vesea, Eng. strawberry. It has more vitamin C than an orange. In Spain, strawberries are available in May and June, while in England they do not appear until early summer. Although natives of Europe, it was not until the 16th C that they were cultivated but wild ones were picked in the forests prior to that. Medicinally, the plant was little used until the 16th C. although the leaves were applied to relieve sores. Those not allergic to strawberries may consume the fruit as a laxative. This contains vitamin C, sugar, organic acids and mucilage. The roots administered as a decoction were used as a diuretic and to elevate gonorrhea (inflammation of genital mucus and loss of semen caused by gonococcus, a pus-producing bacterium). The roots with the leaves have been used to relieve diarrhea. The leaves, for their tannin content, are prescribed as an antiscorbutic, astringent, laxative and a tonic. [Font. STRAWBERRY POTTAGES ADAPTED FROM HIEATT AND BUTLER’S CURYE ON INGLYSCH, PART II DIUERSA CIBARIA, #13 FRESERES, STREBERYEN, p 46

2 lbs strawberries
2 c red wine
1 c almonds
1 qt meat broth
1 c starch or rice flour
1 c sugar
1tsp ground cinnamon
a few drops of food coloring

Garnish
2 or 3 whole strawberries
1 few blue berries

Preparation


Put all the strawberries, except for two or three to be saved for garnish, and wine in a food processor and blend the mixture. Pour this into a pot. 

Grind the almonds in the food processors and add the meat broth. Strain this through a cheesecloth into the pot. Bring this to a boil. Put the starch in a separate pot and slowly add the broth mixture to dissolve the starch. 

Pour this back into the original pot. Add the remaining ingredients and gently stir until it thickens. Pour this into a serving bowl and garnish with strawberries and blueberries.

  1. Do you know if this was served alongside a sweet bread or wafer by chance? Or was it just served as is?

  2. It is supose to be served as a pudding by itself but the addition a sweet bread or wafer would be a nice idea!
