FRUTA DE QUESO FRESCO WITH 15TH CENTURY FRESH CHEESE TURNOVER RECIPE

fried cheese tartlettes or turnovers. These consist of fresh ewe’s cheese and a little flour that is fried and topped with something sweet. [Nola. 1989:xlvii-4]

FRESH CHEESE TURNOVERS  ADAPTED FROM NOLA'S xlvii-4 FRUTA DE QUESO FRESCO[1]




Ingredients

1 1/3 c  ewe’s cheese
1 c flour
2 eggs

turnover dough
1 egg slightly beaten

For frying:

4 c lard

Garnish:

1 drizzle of honey
1 tbsp sugar
1 tbsp rosewater

Preparation

Grind cheese in a mortar. Put it in a trough and add well-sifted flour. Beat eggs and blend them with the flour.

Make turnover dough. Roll it out and cut it into circles. Place a spoonful of cheese stuffing on each circle. Paint the edges with raw egg slightly beaten and seal the edges shut  by pressing down with the prongs of a fork. 

Warm a frying pan and add the lard. When hot, slowly fry the turnovers. 

When golden brown remove them from the heat spinkle them with honey, sugar  and rosewater.
