HIPROCRÁS WITH SWEET SPICED WINE RECIPE ADAPTED FROM FORME OF CURY

(Hippocratic wine [because it was strained through a filter or bag called a “Hippocrates’ sleeve”]), MEng ypocras,< Eng. hippocras, an aromatic cordial. It has been claimed to be a custom originating in England but this is not so.

Hipprocrates, himself, invented the ancient brew for common ills consisting of red or white Greek wine, cinnamon, cloves, allspice and honey. After bringing this to a slow boil, it could be served hot or cold.

The Arabs brought their interpretation to Europe. Theirs  consisted of five parts cinnamon, one part ginger, ½ white wine, ½  red wine. It was boiled in a glass pan and strained various times until clear.

Vinters sold hippocras in London in 1250.
Arnaldo de Vilanova (1240-1341), celebrated Catalan physician,  in De vinis gives a recipe for it. Sent Soví and Nola provide recipes for the spices for it calling them “Duke’s Powder”. Chaucer mentions it in “The Merchant’s Tale.” Hipprocras was traditionally served after dinner on special occasions such as Christmas.

HIPPOCRAS ADAPTED FROM IV: FORME OF CURY #199 PUR FAI YPOCRAS, p 143 

Spice Mixture ingrediens:

A Steaming Hot Hippocras
to Raise the Spirits

3 oz ginger
3 oz cinnamon
1/7 tsp Spanish lavender
1/7 tsp galangal
1/7 tsp cloves
1/7 tsp long pepper[1]

1/7 tsp nutmeg
¼ oz marjoram
¼ oz cardamom
1/10 oz grains of paradise[2]

1/10 oz.  cinnamon flour

Mixture of wine with spices, ingredients:
1 liter red or white wine
1 c sugar (for nobility) or 1 c honey for lower classes
1/3 c spice mixture above 

Preparation
 
Scrape the ginger. Grind all the spices together. Store in refrigerator until ready to use

Put the wine in a saucepan and add the sugar or honey Bring to a boil. When all the sugar is dissolved, add the spice mixture. Boil for a a couple of moments and remove from heat.

Strain the wine until it is clear. Serve warm or cold.

For Hypocras: 3 oz cinnamon and 3 ounces ginger; 1 diner Spanish spinkenard, 1 diner galingal, 1 diner cloves, 1 diner long pepper, 1 diner nutmeg, ¼ oz marjoram, ¼ oz cardamom. 1/10 oz. grains of paradise and1/10 oz.  cinnamon flour.









[1] Use white pepper of long pepper is not available.
[2] Guiena grains can be used as a substitute.
