HORCA WITH RECIPE FOR ROCKET SAUCE WITH PORK CHOPS

1. gallow, gibet, hanging post. 2. yoke for dogs and pigs. 3. grass for tying garlic and onions. 4. pitch fork or willowing fork with two prongs used in slaughter to pile dried grass over the pig in order to scorch all parts of the skin well. See chamuscar. [Serradilla. 1993:36:144]

Ingredients

1 lb pork chops
121 c figs (300 gr)
1 tsp cinnamon
1 tsp mashed and diluted saffron
3 tsp ginger
1 c vinegar
½ c sugar

Dice pork chops and cook them on a spit.

Prepare the rocket as follows: Shed it and scald it 7 or 8 times. They take dried figs that have been soaked in hot water and good spices; add enough saffron to turn the ingredients yellow. Chop well and season with vinegar. The add sugar or syrup.

 Lonsas de vaqua ho de porch en ast donats ab arugua; e la horugua sia ffeta per esta manera: Vós prenets la horugua e rellats-la, e escaldats-la VII ho VIII veguades. Puys ayats ffigues que sien remullades ab aygua calda, e de bones espícies; e que y aya molt seffrà per so que vengua bé grogua. E sis ben picada e axetada ab vinagre.  E puys mates-hi[3] mel ho sucre ho arop.
