Soft roe and ponzu sauce

milt, soft roe, the seminal fluid from the male genitalia of fish, mollusks and other marine creatures and used as food. Cod milt is like pork brains but lighter and finer in texture. When steamed it becomes as soft as egg custard. It can be pan fried or deep fried in very hot grease or oil. Although crisp on the outside, the inside remains creamy and soft. It can be harvested from cod, anglerfish and/or monkfish during the winter. It was sold fresh in 15 C. and consumed as a delicacy. [Castro. Alimentación. 1996:327; ES: Wang.
