Ar. asābiZaynab, Eng. Zainab’s fingers or lady’s fingers. These were not cookies or biscuits as today, but pastries containing a nut filling and rolled into cylinders. The tubes were then fried.

Today, the Arab version is made with phyllo leaves (tissue thin pastry). (In Tunis there were barley sugar “fingers”, which could have been a candy rather than a pastry.)

The pastries are named after Zainab bin Jahsh, Mohammad’s seventh of 12 wives. Before he died, he explained to his wives that the one with the longest hands would meet him first in heaven. The wives measured each other hands and Zainab had the longest, not only physically but also because of her generosity. To the poor she gave all she could in order to share the treasures Mohammad left her. Although she lived for another nine years, she was the first wife to die. [ES: Ibn Kathir. Ingredients

Filling Cylinders with Pistachio Stuffing

1 lb flour
3 oz sesame oil

 c hot water
1 pk wooden skewers 5” long
1 egg
canola oil for frying

For the stuffing:
¼ c honey
1 c pistachios shelled
1 tbsp musk
2 tbsp rosewater
¼ c sugar

Garnish
¼ c powdered sugar

Knead flour with sesame oil. Add hot water. 


Soak the skewers in sesame oil. Roll out the dough until paper thin. Place 4 or 5 layers on top of each other. Put 10 skewers together and roll the layers of dough around them making a cylinder. Cut the dough. Paint it with slightly beaten raw egg to make the layers of dough stick together.


Heat frying pan. Add oil. When warm gently fry the cylinders taking care that they do not open. When golden brown remove from heat.

Combine all the ingredients for the stuffing in a food processor. When the pistachios are well chopped and the ingredients are well mixed fill a pastry tube with this mixture.
Remove the skewers from the cylinders. Fill them with the pistachio stuffing using the pastry tube.

Skrinkle the cylinders on all sides and serve warm or at room temperature.
