MANERA WITH POMEGRANTE SAUCE THAT LOOKS LIKE PATE

Like Pate in the Same Way Cooked to Thicken

POMEGRANATE SAUCE 
ADAPTED FROM NOLA’S xxxix-3 
SALSA GRANADA

Ingredients

2 chicken livers
4 egg yolks
½ c broth
½ c orange juice[1]

1 tsp peacock sauce[2]




Preparation

Cook the livers in a pot pot; and when cooked, grind them in a mortar with egg yolks; blend them with

well salted  broth, add the juice and well-ground peacock sauce. Stirring constantly in one direction, 
simmer until it thickens,

It looks Like Pate But Its Not
As Pate it is delicious on crackers or bread

[1] Pomegranate juice was used instead as it seems more appropriate for the recipe.
[2] Nola’s recipe xii-2 calls for 4 oz cinnamon, 1 oz cloves, 1 oz ginger, enough saffron to color the mixture. Grind well and strain. Some add grains of paradise.
