MANJAR WITH 13TH CENTURY RECIPE FOR ROAST CHICKEN

RECIPE FOR ROASTING CHICKEN ADAPTED FROM HUICI’S TRANSLATION OF ANÓN AL-ANDALUS #41. [P- 24] RECETA DE SU ASADO, p 35

Ingredients

Covering the Chicken with Herb and Oil Mixture
A Splendid Variation for Fowl

1 fowl such as chicken
1 tsp saslt
1 tbsp fresh thyme leaves
½ tsp white pepper
¼ c oil
1 tbsp coriander

Preparation

Kill a fowl and hang it over night from its claws. The next morning, clean it and set it aside.


Grind salt, thyme, pepper, oil and coriander until thin like honey. Coat the fowl with this inside and out. Place it in an earthenware oven and when roasted, improve the sauce it desired.
