MANTECADOS WITH 13TH CENTURY RECIPE FOR CHEESE PASTRIES

Hisp Ar almohábanas, almojábanas, almojávanas, Soria mojábanas; Ar al-mojebene (cheese cake), muŷabbanat mujabbana, Eng cheese pastries or cheese balls. Today, it is larded dough containing cheese, egg and sugar. It is the same dough used for fritters filled with cream and other fried pastries that retain the Hispone Arabic name. In the 14th C, it was dough containing cow and ewe’s cheese. See mantecadas de Astorga, quesada, queimón and tarta de queso.  RECIPE FOR CHEESE PASTRIES WITH "EGGS" ADAPTED FROM HUICI’S TRANSLATION OF ANÓN AL-ANDALUS, #411 RECETA DE “ALMOJÁBANA[1]” CON HUEVOS, pp 226-227


Ingredients

Cheese Balls Ready for Frying

4 c flour
2 tbsp yeast
8 huevos
4 anis stars
1 tbsp chopped fennel
3 c cow’s cheese
1 c ewe’s cheese
olive oil for frying

Garnish
2 tbsp sugar
2 tsp cinnamon

Preparation

Put flour and yeast into a mixing bowl. Add eggs and knead five minutes. Add half the cheese, anise and fennel and continue kneading. Cover with a cloth and let rise for two hours.

Take enough dough to make small balls. Flatten each and add half a spoonful of cheese in the center. Wrap the dough around the cheese and make a small ball with each of the pieces of dough and fry them.

Sprinkle with sugar and cinnamon.

The author of the recipe states that: ‘It turns out remarkable and delicious. This is what Ibn Sa'id b. Jami (an Almohad Vizier) used to make and his companions and everyone found it good. It is an invention of Mūsā b. Ŷāmi, the market inspector of Marrakesh.’
