MOSCATEL WITH A REFRESHING 13 CENTURY RECIPE FOR GRAPE JUICE IN CHICKEN SOUP

muscat grapes. Spain has the most abundant and richest growing on the Mediterranean coast around Malaga and Alicante. More famed still are those from Jerez and Madrid where they are used to make pardilla wine. The white or violet colored grapes are big, round, smooth skinned and sweet flavored. The aroma is like raisins. It is used to produce sweet wines. [Benavides-Barajas. 1995:327]

ANOTHER SUMMER RECIPE TO REFRESH THE BODY ADAPTED FROM ANÓN AL-ANDALUS #190 OTRO IGUAL DE VERANO QUE REFRESCA EL CUERPO, p 123

Ingredients[1]


1 whole chicken
4 sour apples
1 lb gourd
sour grape juice from 1 lb grapes

¼ c almond oil or other if not available
½ c Sulaimani sugar[2]

Preparation

Slaughter a mature chicken, clean it and wash it. Put it in a pan and cover with water.

Peel apples. Remove pits and chores. Chop into thirds and add to pot.   

Remove rind from gourd and chop into bite sized pieces.

Remove vine from grapes and grind them in a food processor. Strain the juice into the pot. Add almond oil and sugar. Cover and cook until done.
 


[1] This lacks seasoning such as 2 boullion cubes, 1 tsp salt, 1 tsp white pepper, 1 tbsp thyme, 1 tbsp oregano and 1 tbsp basil.
[2] < or Slemani, is a city in Iraqi Kurdistan. Regular white sugar was used.
