PANCETA WITH DON QUIJOTE'S DELECTABLE RECIPE FOR SCRAPES AND LEFTOVERS

In the first chapter and on the first page of Don Quijote de la Mancha, Cervantes indicates that Quijote was very Christian as he ate pork, which is forbidden by Islamic law and is considered not kosher by Jews.  On Saturday nights, therefore, he ate “Duelos y Quebrantos” (Scraps and Leftovers) which consisted of fried junks of bacon, chorizo sausage and ham. QUIJOTE’S SCRAPES AND LEFTOVERS ADAPTED FROM CERVANTES' DON QUIJOTE, "DUELOS Y QUEBRANTOS"

Ingredients 
for 2 persons

A Delectable Dish of Leftovers

2 oz. rasher of bacon
1 chorizo sausage
2 oz Serrano ham
2 eggs
2 slices of bread

Preparation

Heat frying pan. Add rasher of bacon and fry until cooked. Remove from heat and slice into junks. Slice sausage and fry in the grease from the rasher.  Cut the ham and fry in the grease from the rasher and saucage.  When done remove from heat and fry eggs in the grease from the pork.


Serve warm with bread.
