PEBRADA BRUNA WITH BROWN PEPPER SAUCE FOR CRANES AND OTHER MEAT

thick sauce for cranes, geese, hare or rabbit and pork such as spare ribs made with pepper, vinegar, saffron, cloves,  and other species. Also, it can be served with roast kid. BROWN PEPPER SAUCE FOR CRANES WITH SAFFRON ADAPTED FROM SENT SOVÍ LXXXIIII QUI PARLA CON SE FFA PEBRADA A GRUES MEYS DE ZAFRA, p 120

Ingredients

1 tsp white pepper
1 tsp cloves

other spices such as:
    ½ tsp nutmeg
    1 tsp ginger
    ½ tsp cinnamon
1 tsp saffron
1 slice of bread
¼ c vinegar
1 qt meat broth

pork ribs

Preparation

Grind spices with bread soaked in vinegar. Add broth made from another meat as the crane is roasted on a spit.  Strain. Heat and cook until thick.

Use this sauce can also be used to accompany crane, geese, hare or rabbit, pork such as ribs.
