1 tsp ginger scrapings
1 tsp galingale
salt to taste
juice from one orange
If the moray eel is alive, be careful because its bite is poisonous; and if alive, beat it well tomake the bones descend to the tail; and then scald it like the conger eel; and then wash it with cold water and cut it in 1-1½ pieces. Sprinkle them with spices.
PREHEAT OVEN 400ºF/200ºC
Bake about 25 minutes, until golden brown, When done, remove from oven and sprinkle with orange juice.
