SALMOREJO (RABBIT SAUCE)

a game sauce. 1. During the Middle Ages it consisted of water, vinegar, oil, salt and pepper and was used on rabbit meat. 2. Today a Cordovan gazpacho without water; creamed with ham and hard boiled egg (with tomato and bell peppers after the 17th C.). Another ingredient is bread pounded into a paste. Oil is added until the consistency is creamy. It is served with oranges, eggs and toasted bread. [Castro. Alimentación. 1996:261:275]

MEDIEVAL SALMOREJO (rabbit sauce)

Ingredients

1 c water
¼ c vinegar
½ c oil
salt to taste
½  tsp white pepper

Preparation


Mix all ingredients. Shake well. Pour over game.
