OCast pámpano, pánpano,  L. Stromateus fiatola, Eng. blue butterfish. These marine fish are natives of Spain but not known in England as they live in subtropical areas in the eastern Atlantic. They are rare in the Bay of Biscay and in the Mediterranean. 

They live in large schools and feed on small fish, medusas and zooplanktons. Butterfish are blue to brownish in color with darker spots on the dorsal and have silver to whitish stomachs. The young fish have vertical stripes on their bodies and black pelvic fins. Villena instructs that they should be carved in the same way as trout.
